Kolai-er Dal
Black gram dal with aromatic tempering - a protein-rich Bengali lentil preparation.
Preparation
Roast dal on low heat for about 3-4 min.
Cook dal with turmeric, salt, and bay leaf. If using a pressure cooker steam for 2 whistles on high heat.
Grind 1 tsp mouri into a dry powder (coffee grinder works well).
Cooking
Heat oil in a flat bottom pan.
Add 1 tsp whole mouri and dry red chilli.
Add cooked dal and let come to boil. Boil for 2-3
Add ginger paste, powder mouri and hing. Let boil for min and remove from heat.
Keep covered for a few minutes before serving.
