Fried Bhaja Moong Dal

Cooking
1. In a frying pan, dry roast the moong dal for 2-3 minutes on medium heat until fragrant and slightly golden. Set aside.
2. Heat oil in a pot or pressure cooker.
3. Add sliced onions and fry until light golden.
4. Add ginger and green chillies. Sauté for 30 seconds.
5. Add the roasted dal, turmeric, and salt. Mix well.
6. Add water and bring to a boil.
7. Reduce heat and simmer (or pressure cook for 2 whistles) until dal is soft but not mushy.
8. The dal should have a semi-thick consistency.
9. Garnish with cilantro and serve hot with rice.
