Meddur Or Uddin Vadai
Crispy South Indian-style lentil fritters (vadai) made from urad dal, seasoned with curry leaves and spices.
Preparation
Soak urad dal in water for 4 hours.
Grind with minimum water to a coarse consistency. Make the consistency as tight as possible.
To the mix add coriander leaves, green chillies, ginger, and salt.
Cooking
Heat oil in a kadai. Oil must be steaming hot.
Use a vadai maker if available or simply take a palmful of the mix and add to the oil giving it a round shape Fry on medium heat till they are golden brown Remove the vadai from oil and place them on a paper towel to soak up oil.
Serve hot with sambar and chutney. Good for breakfast, and teatime. A South Indian delight.
