Sabji Moong Dal (Moong Dal with Vegetables)

Cooking

1. Wash moong dal thoroughly and soak for 30 minutes. Drain.

2. In a pressure cooker or pot, add dal with 2 cups water, turmeric, and salt. Cook until soft.

3. In a frying pan, heat oil. Add cumin seeds and bay leaf. Let them splutter.

4. Add sliced onions and fry until golden.

5. Add ginger, garlic, and green chillies. Sauté for 1 minute.

6. Add diced vegetables and cook for 5 minutes.

7. Add chopped tomatoes and cook until soft.

8. Add the cooked dal and 1 cup water. Mix well.

9. Simmer for 10-15 minutes until vegetables are tender.

10. Garnish with cilantro and serve hot with rice.
