Cooking

1. Slice karela and lauki (bottle gourd). Sprinkle with salt and set aside for 15 minutes. This helps reduce bitterness.

2. Wash and drain the salted vegetables.

3. Wash masoor dal and set aside.

4. Heat mustard oil in a pot until smoking, then reduce heat.

5. Add panch phoron and let it splutter.

6. Add sliced onions and fry until light golden.

7. Add ginger and green chillies. Sauté briefly.

8. Add karela and lauki. Fry for 3-4 minutes.

9. Add tomatoes, turmeric, and salt. Cook for 2 minutes.

10. Add the dal and water. Bring to a boil.

11. Reduce heat and simmer for 20-25 minutes until dal and vegetables are cooked.

12. The dal should be thick. Serve hot with rice.
