Heat oil in a kadhai.

Add mustard seeds, and dry red chilly. Fry for 30 sec till seeds splutter.

Add carrots and fry for 2 min on medium heat.

Add capsicum, cumin powder, coriander powder and chilli powder. Fry for 1 min on medium heat.
