Borboti Chochori

(String Bean Curry)

Serving Size:  4 persons

Ingredients:

Borboti/ String Beans - 200 g

Alu/Potatoes - 4 medium cut into thin wedges

Cilantro - 1/4 cup, chopped

Green Chillies - 3-4, deseeded

Paanch Phoron - 1 tsp

Shukno Lonka/Dry Red Chilli- 2

Turmeric - 1/2 tsp

Red Chilli Powder - 1/2 tsp

Black Pepper Powder - 1/2 tsp

Sugar - 1/2 tsp

Salt - To taste

Oil - 2 tbsp

 

 

 

 

 

 

 

 

 

 

 

 

 

 

Cooking procedure:

  1. Heat oil in pan, to it add paanch phoron, and dry red chillies. Fry for 30 sec or until seeds start to splatter.

  2. Add string beans and potatoes. Fry for 3-4 min.

  3. Add turmeric, red chilli powder, pepper powder, and salt. Fry for 2-3 min.

  4. Add 1 cup hot water and bring to boil. Cover and simmer until vegetables are cooked

  5. Remove cover, turn heat to high and let the remaining water evaporate

  6. A minute before removing from heat, add sugar, green chillies, and mix well.

  7. Garnish with chopped cilantro

This curry may be served hot with rice/roti and dal
