Ingredients:

This is a item thats tasty and is simply made from vegetable skin of lauki that is usually discarded.

Lau/Lauki/Bottle Gourd skin that is obtained after de-skinning the vegetable - finely sliced

Kaloni seeds - 1/4th tsp

Mustard paste - 1 tbsp

Dry Red Chillies - 2 (depending on requirement)

Turmeric powder - 1/4th tsp

Salt - To taste

White Oil - about 1 tbsp

 

 

 

 

 

 

 

 

 

 

 

Preparation procedure:

  1. Add sliced bottle gourd skin to boiling water and let boil for 10-15 min. Add salt and a pinch of turmeric to the boiling water.

  2. Drain the water and keep aside

 

Cooking procedure:

  1. Heat oil in a kadai.

  2. Add kalonji seeds and dry chillies to the oil. Let splutter.

  3. Add boiled vegetable skin to the oil and fry on medium heat with cover.

  4. Add turmeric powder and let cook for 7 minutes while stirring occasionally.

  5. Add mustard paste, and salt to taste.

  6. Cook until the vegetable skin is adequately cooked.

 

Serving Suggestions:

Serve with hot rice as starter.
