Urad Dal Bori (Vadi)

 

Recipe for Jhol or Torkari'r Bori (Vadis used in making Curries)

 

Urad Dal - 1 cup

Mouri/Fennel Seeds - 1 tsp

  1. Soak dal (lentil) for atleast 4 hrs and grind to a tight paste using as little water as possible. Take the ground dal (lentil) in a bowl and add fennel seeds. Mix thoroughly with your hand.

  2. Grease the tray to be used for making boris (vadis) with oil. Greasing the surface will aid in removing the boris without breaking them after they are dried. Alternately, a cotton cloth (like a cotton sari) may be used and this was a more prevalent method in our homes.

  3. Make medium size dumplings and place on the tray keeping some space between two consecutive ones.

  4. Sun-dry the boris.

Variation: Hing may also be used in place of Mouri. Do not add salt to boris (vadis) that are meant to be added to curries.

 

Recipe for Bhaja Bori (Fried Vadis)

  1. Prepare dal (lentil) as above. To it add 1 tbsp posto (poppy seeds) and mix thoroughly.

  2. Grease the tray to be used for making boris (vadis) with oil. Greasing the surface will aid in removing the boris without breaking them after they are dried.

  3. Make small size dumplings and place on the tray keeping some space between two consecutive ones.

  4. Sun-dry the boris.
